I Would Do Anything For This Meatloaf

… but I won’t do that! Seriously, this is the tastiest, moistest meatloaf I’ve ever made, and you can throw it together in no time with stuff you’ve got around the house. Supposedly it is based on the Cheesecake Factory’s “Mile High Meatloaf”.

1/2 kilo or 1 pound lean ground beef
1 average onion, chopped
2 eggs
1/3 cup tomato paste or ketchup
1/4 cup dry red wine
1/4 cup milk
1 tablespoon mustard (the grainy kind is nice if you have it)
1 packet taco seasoning or other pre-mixed spice packet… or salt annd pepper to taste
1/2 cup breadcrumbs
1/2 cup shredded Cheddar cheese
Preheat oven to 300F or 175C.
Put all the ingredients in a bowl. Combine well.
Make a freeform loaf on a cookie sheet or use a loaf pan.
Bake for 50 minutes. It’s not as firm as some meatloaves, so it may take some fancy knife-work to slice. Serves two hungry people, three average people, or four small birds. No leftovers.

    Now, do you have a good mac & cheese recipe? Nothing goes better with meatloaf than mac & cheese. (The Full Fargo = meatlaof, mac & cheese, and canned corn.)

    this is not the cheesecake factory recipe. I was just there the other night and it had celery and carrots in it too.
