Kofi Annan Cookies

Short, black, and useless, yet likeable.
3/4 cup flour
1/2 cup cocoa
1/2 cup cornstarch
1/2 cup confectioner’s sugar
1-1/2 sticks of butter, softened and cut up (but NOT melted)
1 teaspoon flavoring (vanilla, almond, etc.)
Equipment: large bowl, two cookie sheets
Preheat oven to 375.
1. Combine all dry ingredients in a big bowl and break up lumps.
2. Add butter chunks and flavoring and smush together with your hands until dough is smooth and uniform. *
3. Pinch off dough into small pieces and roll into small, 1″ balls. Place on ungreased cookie sheets (these cookies don’t “spread”, so you can put them close together) and flatten slightly with the heel of your hand.**
4. Bake for 10-12 minutes.
* If you have no sense of fun and/or don’t like to get your hands dirty (like Kofi!) you can perform this step in a stand mixer, creaming the butter first and then adding the flour mixture. A food processor will also do.
